不同杀菌方式对蟹汤品质和挥发性风味物质的影响

Effects of different sterilization methods on the quality and volatile flavor of crab soup

    目的 探究不同杀菌方式对蟹汤品质和挥发性风味物质的影响。
    方法 以中华绒螯蟹为原料,分析了巴氏杀菌(PS)、高温灭菌(HS)和超高温灭菌(UHT)3种不同杀菌方式对蟹汤理化特性、风味等品质的影响。
    结果 3种杀菌方式均可使菌落总数降至检出限以下(<0.50 lg CFU/g),且UHT灭菌对蟹汤营养物质、色泽、pH、体外消化影响最小,更有利于蟹汤氨基酸的保留,滋味轮廓最接近未杀菌(NS)组。采用气相色谱-离子迁移谱法(GC-IMS)共鉴定出32种挥发性物质,其中UHT组与NS组样品的挥发性物质最为相似。通过相对气味活度值(ROAV)和变量投影重要性因子(VIP)筛选出8种蟹汤风味的关键差异化合物(VIP≥1),其中NS组的关键差异化合物是苯甲醚、四氢噻吩-3-酮、苯乙酮、甲基环戊烯醇酮,均风味优良;UHT组的关键差异化合物除了NS组的关键差异化合物外,还增加了γ-松油烯、3-辛醇,均风味优良;PS组和HS组的关键差异化合物均为庚醇、2-辛醇,属于不良风味物质。
    结论 UHT灭菌不仅对蟹汤品质的影响最小,还会增加优良风味。本研究对于促进中华绒螯蟹的加工利用,提高杀菌水产品的品质具有重要的实践意义。

     

    Abstract: Eriocheir sinensis gains wide popularity for its high nutritional value and distinctive savory taste. To investigate the effects of different sterilization methods on the quality and volatile flavor compounds in crab soup, Eriocheir sinensis was used as the raw material in this experiment. The effects of three different sterilization methods, namely pasteurization (PS), high-temperature sterilization (HS) and ultra-high temperature sterilization (UHT), on the physicochemical properties, flavor and other quality indicators of crab soup were analyzed. The results showed that all three sterilization methods reduced the total bacterial count to below the detection limit (<0.50 lg CFU/g). Moreover, UHT sterilization exerted the minimal impact on the nutrients, color, pH value, and in vitro digestibility of crab soup, better preserved amino acids in crab soup, and presented a taste profile most similar to the unsterilized group (NS). A total of 32 volatile compounds were identified by gas chromatography-ion mobility spectroscopy (GC-IMS). The volatile compositions of the UHT group were highly similar to those of the NS group. Based on relative odor activity value (ROAV) and variable importance in projection (VIP), eight key differential compounds contributing to crab soup flavor were screened out (VIP≥1). The key differential compounds in the NS group were anisole, tetrahydrothiophen-3-one, acetophenone and methylcyclopentenolone, all of which presented favorable flavor characteristics. Besides the above substances, γ-terpinene and 3-octanol with pleasant flavor were additionally identified as differential compounds in the UHT group. Heptanol and 2-octanol, categorized as off-flavor substances, were the dominant differential compounds in both PS and HS groups. The results indicated that UHT sterilization exerted the slightest impact on crab soup quality and could further enhance its desirable flavor. This study has important practical significance for promoting the processing and utilization of Eriocheir sinensis and improving the quality of sterilized aquatic products.
